This simple protein packed dish is easy to prepare and everyone from kids to grownups will love it. I substitute wheat-free panko bread crumbs in for the usual wheat ones and you can’t even tell the difference. Add a steamed veggie like broccoli or Brussels sprouts and you have a perfect healthy meal!
You will need
1-2lbs cod fillets, cut into 1X2inch chunks
1 cup gluten free panko style bread crumbs
1 large egg, beat
1 cup almond milk
salt and pepper
Preheat oven to 350 degrees. Combine the egg and milk in a bowl. Dip the cod pieces in the egg mixture and then roll it in the bread crumbs. Sprinkle each piece with salt and pepper and place on a greased baking sheet. Bake for 25-30 minutes or until bread crumbs are golden brown.
