This INCREDIBLY Simple Healthy Breakfast Recipe Blew My Mind

It’s not often that I find a new recipe that is unbelievably simple, tastes amazing, is very healthy and lasts for 3 days (if I don’t eat them all right away!).

 

This recipe combines eggs, sausage, cheese, onion and spinach to create delicious egg muffins.  2 or 3 of these fills you up and provides plenty of protein, healthy fats and veggies.  Save the rest and warm them up for breakfast the next 2 or 3 days.  Chances are you won’t get tired of eating them because they are so tasty!

 

You can also substitute bacon or any other meat for the sausage and mix up the veggies you put in them.  Garlic, broccoli and many other veggies go great in this recipe too.  All you need to do is chop the veggies into very small pieces.

 

Here is the recipe…

 

6 eggs

1 cup chopped spinach

1/3 small onion, finely chopped

1 cup shredded sharp cheddar cheese

½ teaspoon Redmond REAL salt

3-4 twists fresh ground black pepper

6 links turkey sausage, finely chopped

 

Preheat the oven the 350 degrees.

 

In a large bowl combine the veggies, cheese, salt, pepper and sausage.

 

In a medium bowl whisk the eggs until smooth and pour into the sausage mixture. Stir to mix.

 

In a 12 muffin tin pour the egg mixture to fill all 12 muffin cups.  Bake for 30 minutes.  Let stand for 5-10 minutes to cool.
