Heavy on the Veggies Meatloaf


1 medium carrot, thinly sliced

1 medium onion, finely chopped

2 celery ribs, chopped

2 cloves garlic, chopped

½ cup tomato sauce

¼ cup almond flour

1 tsp Redmond REAL salt

2 twists fresh ground black pepper

2 eggs

2 lbs ground beef

½ green pepper, sliced into rings

4 strips bacon, cut in half


Preheat oven to 350 degrees F


In a large bowl combine first 10 ingredients and mix thoroughly using your hands.  Place the meat mixture in a medium sized loaf pan.


Top the meat mixture with the bacon slices, then place the pepper rings on top of the bacon. 


Bake for 1 hour 15 minutes or until a meat thermometer reads 160 degrees.
