Get Out the Grill for this Healthy Chicken Breast Recipe

Here in Wisconsin the weather is starting to warm up (finally) and that means its time to get out the grill!  One of the tricks to making delicious, juicy chicken is to marinate the meat for 30 minutes to an hour before cooking it. 

Its important to make your marinade from healthy ingredients however because many prepackaged marinades and salad dressings contain high fructose corn syrup, canola and soybean oil and other not so good for you ingredients.

This marinade will keep you chicken moist and give it a subtle zippy flavor that will have you coming back for seconds. These chicken breasts are pretty quick to make and pair well with any summer veggie or salad.

Zippy Healthy Grilled Chicken Breasts

1 lb chicken breast

3 tablespoons raw apple cider vinegar

1 cup water

2 tablespoons extra virgin olive oil

Juice from ¼ fresh lemon

Place the chicken and marinade ingredients in a large zip lock bag.  Flip bag to coat chicken in the marinade.  Let sit 30min to one hour flipping bag occasionally.

Heat grill to medium heat if using a gas grill.  With charcoal once coals are white hot spread in a single thin layer.  Grill chicken for 7-10 minutes per side or until no pink remains.

Lightly season the cooked chicken breasts with Redmond REAL salt and a few twists of fresh ground black pepper.
