This delicious and healthy apple cinnamon scone recipe replaces wheat flour with ground flax seeds and almond flour. This not only adds protein but also eliminates much of the blood sugar spike associated with wheat based baked goods. The addition of apple sauce keeps these scones nice and moist. For an extra special breakfast try adding a drop of raw wild flower honey!

Apple Cinnamon Scones
1 cup ground flax seeds
1 cup almond flour
1 tablespoon ground cinnamon
½ teaspoon ground clove
1 ½ teaspoons baking powder
¼ teaspoon sea salt
2 tablespoons coconut sugar
5 tablespoons cold butter
½ cup almond milk
1 teaspoon vanilla extract
½ cup unsweetened apple sauce
Preheat oven to 350 degrees F. In a medium bowl mix flaxseeds, almond flour, cinnamon, nutmeg, salt, baking powder and coconut sugar. Cut the butter into mixture until it’s the size of peas.
In another bowl blend eggs, almond milk and vanilla. Pour into dry ingredients and mix well. Add apple sauce and mix.
Spray a baking sheet with olive oil spray and form dough into 12 semi-flat balls. Bake for 20 minutes
