BLT Quinoa Salad

1 cup quinoa

1 ½ cups filtered water

½ cup organic mayo

1 teaspoon Redmond REAL salt

3 twists fresh ground black pepper

2 pieces nitrate free bacon, cripy and crumbled

¼ cup frozen kale or spinach

¼ cup chopped tomato

 

In a medium pan add quinoa and water.  Bring to a boil over high heat.  Cover and reduce heat to medium-low and simmer for 10-15 minutes or until all water is absorbed.  Add kale or spinach, remove from heat and let sit covered for 10 minutes.   Add remaining ingredients and stir to blend.
