Beef with Vegetables in Red Wine Sauce
1lb grass fed ground beef
2 tablespoons extra-virgin coconut oil
1 medium onion, chopped
1 clove garlic, finely chopped
2 cups sliced mushrooms
2 cups frozen Brussels sprouts
½ cup organic mayo
¼ cup prepared hummus
1 cup filtered water
1 ½ cups dry red wine (Try Infinity’s Red Table Wine if You Are in Wisconsin!)
1 tablespoon raw apple cider vinegar
In large pan heat oil over medium heat, add beef. Cook, stirring often, until most of the pink is gone. Add onion and Brussels sprouts and water. Cover and let sit for 5 minutes. Add garlic, mushrooms, apple cider vinegar and red wine and cook over medium heat for 5 minutes or until most of the wine/water combination has been absorbed by the food. Add mayo and hummus and stir to blend. Let cook for additional 1-2 minutes.
*Can be served over quinoa, salad greens or eaten as is.
