An Unexpected Combination for a Great Summer Salad Recipe

For me salads are a regular part of my diet anytime of the year but summer is an especially great time of year to enjoy salads because of the abundance of fresh produce.  A salad containing mixed spring greens, spinach or Italian blends of leaves can provide a nutrient loaded meal when combined with healthy fats and quality proteins. Unfortunately coming up with new ways to keep salads interesting isn’t always so easy when you make 7-10 salads a week.    This recipe combines my favorite sausage recipe and puts it over mixed greens.  When I first had the idea I was a little skeptical it would be a good pairing but it has since become one of my favorite salads.  If you try it out leave a comment below to let me know how you liked it!


Quick and Easy Sausage

1lb ground turkey

1 tablespoon coconut oil

½ cup fennel root, chopped

½ small onion, chopped

1 teaspoon garlic powder

1 teaspoon thyme

1 teaspoon sage

1 tablespoon olive oil

1 teaspoon Redmond REAL salt

Dash fresh ground black pepper


In a medium pan heat coconut oil to medium heat and add meat.  Cook until all pink is gone. Add onion and fennel and cook for 2-3 minutes.  Add seasonings and stir to mix.  Continue cooking for 1 minute. Remove from heat and add olive oil.

Add about 1 cup of sausage mixture over organic mixed greens and enjoy!
